Siew good.
Oh my lord, the rice noodles were great. My sauce wasn’t quite right; it lacked the depth and complexity of the sauce on the pad siew at The Thai Spice, but the noodles themselves were phenomenal. They were chewy yet light, springy yet yielding, crisped on the outside and tender on the inside.
Now I just need a really great sauce recipe. Anybody have any favorite Thai sauces? Generally I prefer the curry and basil type sauces to the peanut ones.
my favorite thing to get at any Thai restaurant is the thai basil noodles with chicken. most places don’t have the good noodles so sometimes i have to settle with rice. however, i found a recipe on the internet somwehere…it has peppers, onions, chicken, loads of basil and i don’t know what else. if i find it i will let you know

The sauce is:
3 tablespoons vegetable oil
3 sprigs Thai basil
6-8 cloves garlic, peeled, washed and chopped
1 small red onion, sliced
2-3 red chilies, seeded and julienned
1 tablespoons paprika
1 tablespoons sugar
3/8 cup soy sauce
3/8 cup lime juice
However, you kind of make the whole thing in a the wok, so there really isn’t a time when you are just making the sauce.
